Hidden Veggie Mac and Cheese
This 20-minute dinner is filling and delicious, and is a great way to serve up all of the components of a meal in one simple dish.

Pesto Meatballs
Adding pesto into the mixture for chicken meatballs adds so much flavor I sometimes wonder why I make them any other way! Pair with toast and fruit, or serve with pasta as you like.
Tender, flavorful, and easy to make and share, these Pesto Meatballs are a favorite family dinner. You can bake them in the oven or cook in the air fryer, and they’re delicious with pasta or as meatball sandwiches.

Sheet Pan Quesadillas
Make dinner for the whole family all at once by making quesadillas in the oven. It’s so easy!
These easy quesadillas can be made with pumpkin puree, sweet potato puree, or butternut squash puree. You can also skip it and just go with beans and cheese! I make these as half moon shapes since it helps contain the mess a little when feeding these to kids.
