I fully recognize that I have the luxury of being in charge of my own work schedule and of working at home. It’s a lot of privilege, a lot working for me, and still, there are days when I find making weeknight dinners nearly impossible.
While it’s taken some time, I have figured out a few methods to get that meal made over the last few years that make it possible for me to feed everyone even when schedules are nuts.
My two main objectives when planning dinner for my family are 1.) to make meals with components that will feed everyone at my table and 2.) to avoid spending more than I have set aside in my monthly food budget.
Which means picking up takeout each night is out because it’s too expensive for four people. (And also it just takes a lot of time, at least where I live in a town of college students who frequently pack our favorite places regularly). I also do want to offer my kids nutritious meals with lots of produce, plus flavors and textures I want to eat, too.
So here’s how I do it…even when I don’t particularly want to dig deep to find energy to cook.
