Turn overripe bananas and basic pantry staples into the yummiest Banana Blondies. Think flavors similar to chocolate chip cookies, with the added bonus of banana!

If you imagine a flavor combo of blondies and banana bread, you get the magic of this recipe. It’s a really easy dessert option that requires just a few ingredients and has such a tender, yummy texture.

I love this as a recipe for ripe bananas that makes a great dessert and snack option. It’s also nut-free, so it’s a great one to share with anyone with allergies.

    Ingredients You Need

Here’s a look at the ingredients you need to have on hand to make Banana Blondies so you know what to pick up from the store or have ready.

Ingredients for banana blondies on countertop.
    • All purpose flour: I use all-purpose flour in this recipe to ensure that the resulting texture is similar to fudgy brownies or blondies.
    • Banana: Use very ripe bananas with a lot of brown spots to ensure the flavor in the blondies is as sweet and rich as possible.
    • Butter: I use unsalted butter in this recipe. You can use vegan butter if needed, too, to make this recipe dairy-free.
    • Brown sugar: I use light brown sugar in this recipe to add more flavor and just enough sweetness to the recipe.
    • Vanilla extract: Adding vanilla extract to this recipe adds the classic banana bread flavor. You can use pure vanilla extract or artificial based on your budget.
    • Egg: Adding one egg into the mixture helps it bind together and lends a fudgy texture.
    • Cream Cheese Frosting, chocolate chips, or melted chocolate, optional to top

    Frequently Asked Questions

Are blondies supposed to be gooey in the middle?

Yes, they are meant to be soft, tender, and going towards the gooey side without being raw or underbaked. But expect the texture to be very soft in the middle and firmer towards the edges.

How can I make Banana Blondies without egg?

You can omit the egg and use your favorite egg replacer. Let the blondies cool completely in the pan to ensure they are firm enough to slice easily.

Can I add chocolate chips to my blondies?

Yes, you can add chocolate chips of any kind and I have a slight preference for mini chocolate chips since they are easier to more evenly distribute throughout the batter.

    How to Store

Store Banana Blondies in an airtight container at room temperature or in the fridge for up to a week.

    Best Tips for Success

    • Top with Cream Cheese Frosting or melted chocolate chips if desired. Or stir mini chocolate chips into the batter and bake.
    • Be sure to use very ripe bananas for the best flavor.
    • I tried to keep the added sugar as low as possible in this recipe, so note that when looking at the amounts. Feel free to experiment if you prefer.
    • Use gluten-free all purpose flour in place of regular if needed to make this recipe gluten-free.
