    My kids love eggs, but they go through phases of interest and no interest, so I have learned to use eggs in lots of ways to be able to include the nutrient-dense ingredient in their meals. Also, eggs are a good source of protein, so they can help us stay full and satisfied, which is helpful for life on the go with littles.

    With kids in the house, cooking is often chaotic, so I love recipes like this that feed a lot of people without needing to stand over the stove. Plus, cooking eggs this way—which is similar to a frittata but cooks in less time—is an easy way to make them ahead of time and reheat them when you need them.

They are a perfect size for a baby-led weaning breakfast, they are delicious with a slice of banana in the middle for banana bites (or you can use another sliced fruit), and they are easy to make.
