    These work great as easy desserts to make to share with the kids, as special occasion desserts, or as an afternoon snack on a day that just needs a little more yumminess.

    My family is currently obsessed with these Cheesecake Cups. They come together so quickly without even needing to turn on the oven or use an electric mixer. They are such a delicious dessert option—though we often just eat the cheesecake batter with a spoon right out of the mixing bowl!

    Mini Ricotta Cheesecakes

    These mini cheesecakes have freshly grated lemon and orange rind in them, which adds a lot of flavor. This lemon flavor is such a nice note in the mix of the cheese and honey. It’s paired here with a simple mini graham cracker crust so each one is small, sweet, and fun for kids and adults alike.

    Kids love having their very own little cheesecake, but you can do this batter in a 9-inch graham cracker crust if you prefer. The baking time will then be closer to 1 hour.

    Easy Ricotta Pie

    This ricotta cheesecake has been a staple in my Italian-American family for my whole life. We love to have it for breakfast, but it works for dessert too!

    How to Store

    All of the recipes can be stored in an airtight container in the refrigerator for up to 5 days, though you’ll want to store the Cheesecake Ice Cream in the freezer. Refer to each individual recipe for the specifics on each.

    Best Tips for Success

    • Make sure the cream cheese is at room temperature and very soft for the easiest blending.
    • Taste the mixture and add more sweetener as needed, whether you opt for powdered sugar, honey, or maple syrup.
    • Know that using fresh lemon juice adds brightness to the flavor of the cheesecake mixtures, but doesn’t actually make it taste lemony.
